Homemade Sesame Noodles

4 of the 5 of the people in my family love Asian food. (My son is not a huge fan, but sometimes that's what he gets! If he's hungry, he'll eat.) We order Chinese takeout at least once a month, although it can be more frequent than that. Our favorite place closed a few years ago, so we switch around now. (Buffalo people - let me know your favorites places!)
My husband will almost always get General Tso's or sesame chicken. My daughters like shrimp lo mein. I tend to change it up, although I always pick something with spice. One of my favorites is sesame noodles. I don't order it often, since it's really more of an appetizer. Once one of us orders an appetizer, the floodgates open and suddenly there's dumplings, fried scallops, extra fried rice...total mayhem. So, in the interest of my wallet, appetizers only make an occasional appearance.
I got it in my head recently to try my hand at making sesame noodles at home. I used this recipe. They were so delicious. (In fact, my daughter made them again just a few days later because she was sad they were gone.) I served them along side a chicken stir-fry, chicken cilantro wontons from Trader Joe's (crisped up in my air fryer), and an eggroll.

Making a stir-fry is a great weeknight dinner. It's pretty fast, allows you to use up veggies, and it can make a smaller amount of meat feed more people. I don't typically follow a recipe when I make mine, but there are so many online. A trick that really makes it seem a bit more like takeout is to coat the chicken in cornstarch before frying up. It will help the chicken brown up, but keep it juicy. It will also help thicken the sauce.
What do you make when you need an easy and fast meal?
