Eggs for the lazy

Ok, maybe "lazy" isn't the right word here. I made these for my eldest, who just arrived home from college and was lamenting the early-mornings awaiting her for the next few weeks while going to work with her father. She agrees that the paycheck will be nice, but not enough to make her happy about having to get up and fit herself into the household morning schedule. (There are two other teenagers and a dad who all have to get ready to leave at the same time. It's as fun as it sounds.) I very kindly offered to make some egg cups (muffins? I don't really like calling them that.) so she could quickly make breakfast on her way out the door...so I suppose I'm inferring that she's the lazy one.
Anyway, I had actually never done this before, but after looking at several recipes, it seemed fairly straightforward: find veggies (and/or meat and cheese!) and get some eggs. We had broccoli in the fridge, so I went with that. I just realized, while typing this, that I meant to put cheddar in and forgot. Oops! Here's the steps I followed:
1. Preheat oven to 350
2. Spray the inside of 6 compartments of a muffin tin
3. Chop broccoli into very tiny pieces
4. Put a few pieces of broccoli in each sprayed compartment, just covering the bottom
5. Chop up about an onion finely to get about 1T
6. Crack six eggs and whisk with the onion
7. Add salt and pepper to taste
8. Pour an even amount over each section of broccoli (mine went just over halfway)
9. Stir each cup with a toothpick just to make sure there is no air
10. Bake for 20 minutes
That's it! I know people have done this for years, but I just never tried. I work from home, now, so I have the luxury of cooking whatever I want. I can see these being good for my son on football days, though, or to feed the crowd he sometimes brings home. My daughter heated two up this morning and grabbed two pieces of bread to eat with them in the car. Perfect!
